Here is a simple dessert you can make that has little sugar but tons of flavor, vitamins, and nutrients:

Watermelon, Lime, Mint Granita Recipe

This granita recipe is an excellent treat in the summer and uses a lot of watermelon and mint to provide health benefits and a satisfying, light dessert.Watermelon contains high amounts of vitamin B6, niacin, riboflavin, magnesium, and many other essential minerals while mint has an extremely high antioxidant capacity. With tons of flavor, a massive amount of beneficial micro-nutrients, and just 70 calories per serving, this recipe is one of the most nutritional desserts you can make any night of the week.


Ingredients (4 to 5 servings)

• 4 Cups of Cubed Watermelon
• 2 Tablespoons of Lime Juice
• 1/2 Cup of Mint (very finely chopped)
• 3 Tablespoons of Sugar


Directions

1. Ensure that there are no seeds in the watermelon and puree in a food processor.
2. Place the pureed watermelon into a fine mesh sieve and force through with a wooden spoon; discard any leftover solids.
3. Mix the watermelon, sugar, mint, and lime juice in a glass bowl that will fit in the freezer.
4. Put the bowl into a freezer for 2 hours, using a fork to scrape through the mixture every 20 minutes.
5. When the granita is frozen into crystals about the size of rock salt, scrape through once more and then serve in a parfait glass. Garnish with extra mint.
